Carrot, Butternut Squash & Coriander Soup
Ingredients
- Sunflower oil
- White onion
- Garlic
- Cumin teaspoon
- Carrots
- Butternut squash
- Vegetable stock
- Fresh coriander
- Yogurt (optional)
- Grated orange zest for flavour
- Fresh ginger small amount
Method
- Sauté the onion, ginger, garlic and cumin until fragrant.
- Add the carrots, squash and stock and simmer 20–25 minutes.
- Purée until smooth, then stir through coriander and a swirl of yogurt.
