Carrot, Butternut Squash & Coriander Soup

Method

  1. Sauté the onion, ginger, garlic and cumin until fragrant.
  2. Add the carrots, squash and stock and simmer 20–25 minutes.
  3. Purée until smooth, then stir through coriander and a swirl of yogurt.
